Whole wheat pasta with peppers and feta

Here’s a simple and delicious recipe to prepare whole wheat pasta with peppers and feta. This dish brings with it the flavors of the Mediterranean with a note of creaminess from the feta.

Ingredients

  • 320 g of whole wheat pasta (penne or fusilli are great)
  • 2 peppers of different colors, for example one red and one yellow, for a colorful dish
  • 200 g of feta
  • 2 cloves of garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil (optional)
  • Pitted black olives (optional)

Preparation

  1. Wash the peppers, remove the stem, seeds, and internal membranes, then cut them into strips or cubes, depending on your preference.
  2. Take a large frying pan, heat a drizzle of extra virgin olive oil and add the garlic cloves to flavor it. If you like the taste, you can leave the garlic in the pan for the whole cooking time, otherwise remove it as soon as it is golden brown.
  3. Add the peppers to the pan and cook on medium-high heat for about 10-15 minutes until they are soft but still slightly crunchy. During cooking, adjust with salt and pepper. If you like, you can also add some black olives to enrich the taste.
  4. In the meantime, bring a pot of salted water to a boil and cook the whole wheat pasta according to the package directions to have it al dente.
  5. Drain the pasta and transfer it to the pan with the peppers, mixing well to flavor it with the condiment.
  6. Cut the feta into cubes and add it to the pasta. Stir gently to avoid the feta crumbling too much.
  7. Serve the pasta hot, garnishing with fresh basil leaves if you like.

This pasta is also delicious served cold as a summer salad. If you want to give it an even more Italian touch, you could add some fresh arugula and some shavings of Parmesan cheese when serving. Enjoy this simple but flavorful dish!
