Whole Wheat Orange Ciambellone Cake

Ingredients
- 300 g of whole wheat flour
- 1 packet of baking powder
- 3 eggs
- 150 g of brown sugar
- 120 ml of fresh orange juice
- The grated zest of 1 orange (untreated)
- 100 ml of seed oil (or light olive oil)
- A pinch of salt
- Icing sugar (optional, for decoration)
Preparation
- Take a bowl and sift the whole wheat flour together with the baking powder.
- In the bowl of a stand mixer or using an electric mixer, whip the eggs with the brown sugar until you get a light and fluffy mixture.
- Add the grated orange zest to the mixture of eggs and sugar and mix well.
- Fold in the flour (with the baking powder) and the orange juice, starting and ending with the flour. Mix the ingredients until they are well blended.
- Pour the oil in a thin stream and continue to mix until you have a smooth batter. Remember to add a pinch of salt.
- Prepare a bundt pan by greasing it lightly and dusting with flour or lining it with parchment paper if you prefer.
- Pour the batter into the pan and level the surface.
- Bake in a preheated oven at 180°C (356°F) for about 35-40 minutes, or until a toothpick inserted in the center of the ciambellone comes out clean.
- Let the ciambellone cool before unmolding it.
- If desired, before serving, you can dust the surface of the ciambellone with icing sugar.
