Whole Wheat Flour and Almond Cookies

Ingredients

  • 200g of whole wheat flour
  • 100g of chopped almonds
  • 100g of brown sugar (or other sweetener of choice)
  • 100g of butter at room temperature
  • 1 egg
  • 1 teaspoon of vanilla extract (optional)
  • 1 pinch of salt
  • 1 teaspoon of baking powder

Preparation

  1. In a bowl, mix the whole wheat flour, chopped almonds, brown sugar, salt, and baking powder.
  2. Add the butter in pieces and work the mixture with your hands or a mixer until it obtains a sandy consistency.
  3. Incorporate the egg and vanilla extract, mixing until you have a homogeneous dough.
  4. Form a ball with the dough, wrap it in cling film and let it rest in the fridge for at least 30 minutes.
  5. Preheat the oven to 180 °C and prepare a baking tray lined with parchment paper.
  6. Take out the dough and roll it out on a lightly floured surface until it is about 5 mm thick.
  7. Use a cookie cutter to shape the cookies and arrange them on the prepared tray.
  8. Bake in the oven for about 10-12 minutes or until the edges start to turn golden brown.
  9. Allow the cookies to cool for a few minutes in the tray before transferring them to a wire rack to finish cooling.

You could also add some grated lemon or orange zest to the dough for a touch of freshness, or for a more Italian twist, use a pinch of cinnamon or a tablespoon of amaretto liqueur for flavor.
