Ingredients
- 100 g of whole wheat flour
- 2 eggs
- 300 ml of milk (can be replaced with vegetable milk for a vegan version or for lactose intolerance)
- A pinch of salt
- Olive oil or butter for greasing the pan
- 3-4 fresh figs
- 2 ripe but firm pears
- Honey or maple syrup to sweeten (optional)
- Ground cinnamon (optional)
- Ricotta or Greek yogurt to serve (optional)
Preparation
- In a large bowl, sift the whole wheat flour and add a pinch of salt.
- Make a well in the middle of the flour and break in the eggs. Start mixing with a whisk, gradually adding the milk to prevent lumps from forming.
- Work the batter until it is smooth and homogeneous. Let the batter rest for about 30 minutes in the refrigerator to obtain softer crepes.
- In the meantime, wash the figs and pears, then slice them thinly or dice them, depending on your preferences.
- Heat a non-stick pan and lightly grease with olive oil or butter. Pour a ladle of batter and cook the crepe on both sides until it becomes golden brown.
- Stack the crepes on a serving platter and add slices of fig and pear between the layers.
- If desired, before serving, you can sprinkle the crepes with a bit of cinnamon, add a drizzle of honey or maple syrup, and accompany with a quenelle of ricotta or a dollop of Greek yogurt.
If you prefer to give a more Mediterranean touch to the dish, you could add a bit of fresh goat cheese instead of ricotta or yogurt, and perhaps a pinch of freshly chopped rosemary to enhance the flavor of the figs.
