Whole Grain Crepes
17/11/2023Whole grain crepes are a healthier variant of traditional crepes. Here’s how you can prepare delicious whole grain crepes.
Ingredients
- 100g of whole wheat flour
- 2 eggs
- 300ml of milk (you can use cow’s milk or a plant-based drink of choice)
- A pinch of salt
- 1 tablespoon of extra virgin olive oil or seed oil
- A bit of butter (or oil) for greasing the pan
Preparation
- In a large bowl, sift the whole wheat flour to avoid lumps.
- Add the pinch of salt and mix.
- Make a well in the center of the flour, add the eggs and start to mix slowly incorporating the flour a little at a time.
- Gradually add the milk, continuing to mix to obtain a smooth and homogeneous batter.
- Incorporate the extra virgin olive oil into the batter and let it rest for about 30 minutes at room temperature.
- Heat a non-stick pan and lightly grease it with butter or oil.
- Pour a ladle of batter into the hot pan, spreading it over the entire surface by rotating the pan itself.
- Cook the crepe for about 2 minutes or until the edge begins to come off the pan and the bottom becomes golden.
- Flip the crepe with a spatula and cook the other side for less than a minute.
- Repeat the process with the rest of the batter, greasing the pan with butter or oil when necessary.
The whole grain crepes are ready to be filled with whatever you prefer. You can opt for sweet fillings, such as jam, fresh fruit, yogurt, or hazelnut spread, or for savory fillings, like cheese, ham, grilled vegetables, or spinach and ricotta.
