Ingredients
- 1 whole chicken cut into pieces or specific parts of your choice (about 1.2 kg)
- Flour, as much as needed to flour the chicken
- 4 tablespoons of extra virgin olive oil
- 2 sprigs of fresh rosemary
- 4 cloves of garlic
- 1 stalk of celery
- 1 carrot
- 1 medium-sized white onion
- 150 ml of dry white wine
- Chicken or vegetable broth, as needed
- Salt and black pepper, to taste
- A sprig of fresh parsley (to garnish before serving)
Preparation
- Clean and cut the chicken into pieces, if you have not already bought it cut.
- Lightly flour the chicken pieces. This will help to create a golden crust and thicken the sauce.
- In a large pan or pot, heat the extra virgin olive oil and add the chicken pieces. Brown them well on all sides until they take on a nice golden color. Once browned, remove the chicken and set aside.
- In the same pan, add the finely chopped onion, carrot, and celery along with the whole garlic cloves and rosemary. Sauté everything until the onion becomes transparent.
- Put the chicken back in the pan with the vegetables and turn up the heat to deglaze with the white wine until the alcohol has evaporated.
- Lower the heat, season with salt and pepper, and cover with a lid. Let it simmer slowly, adding broth occasionally to keep the chicken moist, for about 30-40 minutes or until the chicken is well-cooked and the sauce has slightly reduced and thickened.
- At the end of cooking, sprinkle with chopped fresh parsley for a touch of freshness and color.
