White Forest

The White Forest is a variant of the more famous Black Forest, but while the Black Forest is made with chocolate and cherries, the White Forest stars white chocolate and often different red berries, such as raspberries or blueberries. Here’s the recipe for preparing a White Forest.

Ingredients

  • 250g of flour
  • 200g of sugar
  • 100g of soft butter
  • 200ml of milk
  • 4 eggs
  • 1 packet of baking powder
  • 1 packet of vanillin
  • 200g of white chocolate
  • 500ml of fresh cream to whip
  • 150g of icing sugar
  • Fresh red berries (raspberries, blueberries, or strawberries)
  • White chocolate shavings to decorate
  • Red berry juice (for soaking the cake, optional)

Preparation

  1. Prepare the cake batter: beat the eggs with the sugar until you get a fluffy mixture. Add the soft butter, milk, vanillin, and mix well.
  2. Add the sifted flour and baking powder, continue mixing until you get a homogenous mixture.
  3. Pour the batter into a buttered and floured cake pan and bake in a preheated oven at 180 degrees for about 35-40 minutes. Check the cooking with a skewer before taking it out of the oven.
  4. Once the cake has cooled, cut it horizontally into layers.
  5. Melt the white chocolate in a double boiler or in the microwave and let it cool.
  6. Whip the cold cream, when it begins to get foamy add the icing sugar and continue to whip until it is firm.
  7. Gently fold the melted white chocolate into the whipped cream.
  8. Assemble the cake by alternating layers of sponge cake and white chocolate cream. If you wish, you can lightly moisten each layer with red berry juice before adding the cream.
  9. Decorate the surface and sides of the cake with the remaining cream and white chocolate and distribute the fresh red berries on top of the cake.
  10. Store it in the fridge before serving it, so that it becomes well-flavored.
