  4. Incorporate the egg yolks one at a time, beating well after each addition.
  5. Whisk the egg whites with a pinch of salt until stiff.
  6. Gently fold the whipped egg whites into the mixture of butter and yolks.
  7. Incorporate the melted white chocolate and mix gently.
  8. Add the sifted flour, mixing gently with movements from the bottom up so as not to deflate the mixture.
  9. Pour the mixture into a previously buttered and floured mold, then bake in the oven for about 45 minutes or until it is golden brown and cooked properly.
  10. Let the cake cool before slicing it horizontally to spread a generous layer of apricot jam.
  11. To prepare the glaze, heat the whipping cream without bringing it to a boil and dissolve the white chocolate in it.
  12. Let the glaze cool slightly before pouring it over the cake, trying to cover the sides as well.
  13. Let the glaze set before serving.
