Ingredients
- 130 g of soft butter
- 130 g of icing sugar
- 6 egg yolks
- 6 egg whites
- 130 g of good quality white chocolate
- 110 g of all-purpose flour
- A pinch of salt
- Apricot jam (for filling)
- 200 g of white chocolate (for the glaze)
- 100 ml of whipping cream (for the glaze)
Preparation
- Preheat the oven to 170 °C.
- Melt the white chocolate in a double boiler or in the microwave, being careful not to burn it.
- Beat the soft butter with the icing sugar in a bowl until you get a fluffy cream.
- Incorporate the egg yolks one at a time, beating well after each addition.
- Whisk the egg whites with a pinch of salt until stiff.
- Gently fold the whipped egg whites into the mixture of butter and yolks.
- Incorporate the melted white chocolate and mix gently.
- Add the sifted flour, mixing gently with movements from the bottom up so as not to deflate the mixture.
- Pour the mixture into a previously buttered and floured mold, then bake in the oven for about 45 minutes or until it is golden brown and cooked properly.
- Let the cake cool before slicing it horizontally to spread a generous layer of apricot jam.
- To prepare the glaze, heat the whipping cream without bringing it to a boil and dissolve the white chocolate in it.
- Let the glaze cool slightly before pouring it over the cake, trying to cover the sides as well.
- Let the glaze set before serving.
