White Chocolate Pudding

Ingredients
- 200 g of good quality white chocolate
- 500 ml of whole milk
- 3 egg yolks
- 70 g of granulated sugar
- 40 g of cornstarch (cornflour)
- 1 vanilla pod (or vanilla extract to taste)
- Whipped cream for garnish (optional)
Preparation
- Start by finely chopping the white chocolate and place it in a large bowl.
- In a saucepan, scald the milk with the split vanilla pod and its scraped seeds. If you don’t have vanilla, you can replace it with one or two drops of vanilla extract.
- In another bowl, whisk the egg yolks with the sugar until you get a light and fluffy mixture.
- Add the sifted cornstarch to the yolks and mix to avoid lumps.
- Once the milk has reached boiling, remove the vanilla pod and slowly pour the hot milk over the yolk and sugar mixture, continuing to stir to blend everything together.
- Transfer the mixture back into the saucepan and cook over medium-low heat, stirring continuously until the cream thickens and begins to boil.
- Remove from the heat and pour it over the chopped white chocolate. Stir until the chocolate is completely melted into the cream.
- Divide the pudding into bowls or individual molds.
- Let cool to room temperature before covering with plastic wrap and placing in the refrigerator for at least 4 hours.
- When ready to serve, you can garnish with whipped cream, and if you like, with chocolate shavings or other decorations of your choice.
White chocolate pudding is suitable as an end-of-meal treat or as a sweet snack during the day. The creaminess and sweetness of white chocolate make it a dessert beloved by both adults and children.
