Ingredients

  • 200 g of good quality white chocolate
  • 250 ml of fresh cream for desserts
  • 1 sheet of gelatin (or 2 g of powdered gelatin)
  • 2 tablespoons of milk
  • 200 g of fresh strawberries
  • 30 g of powdered sugar (optional, for the strawberries)
  • Some whole strawberries for garnish
  • Fresh mint for garnish (optional)

Preparation

  1. Start by soaking the gelatin in cold water for about 10 minutes (if you are using sheet gelatin) or dissolve it in the milk at a low temperature if using powdered.
  2. Meanwhile, chop the white chocolate into small pieces and place it into a bowl.
  3. Take 100 ml of the cream and bring it almost to a boil. Pour the hot cream over the white chocolate and wait a minute before stirring until you have a smooth and homogeneous mixture.
  4. Squeeze the soaked gelatin and dissolve it in the warm white chocolate mixture, stirring well until fully absorbed.
  5. Let the white chocolate ganache cool to room temperature.
  6. Meanwhile, wash the strawberries, remove the stems, and cut them into pieces. If you want a sweeter mousse, you can toss the strawberries with powdered sugar and let them marinate for a few minutes.
  7. Whip the remaining cream (150 ml) until it is firm but not too stiff.

  9. Blend the strawberries with a mixer until you get a purée.
  10. Gently fold the strawberry purée into the white chocolate and cream mixture, stirring gently from the bottom up to maintain a frothy texture.
  11. Pour the mousse into serving glasses or cups and let it cool in the refrigerator for at least 2 hours.
  12. Before serving, decorate with whole strawberries and mint leaves for a touch of color and freshness.
