Watermelon Popsicles

Watermelon popsicles are a refreshing treat perfect for summer. Here’s the recipe to make them at home, with an Italian touch.

Ingredients

  • 800 g of watermelon (seedless)
  • 100 g of sugar (optionally, you can reduce it depending on the sweetness of the watermelon or personal taste)
  • Juice of 1 lemon
  • A few fresh mint leaves (optional for an extra touch of freshness)
  • Water (if necessary, to help blend the watermelon better)

Preparation

  1. Cut the watermelon into pieces, making sure to remove all the seeds. Place the pieces in a blender.
  2. Add the sugar and lemon juice to the blender. If you have chosen to use mint, add it at this step.
  3. Blend everything until you have a homogeneous mixture. If necessary, add a little water to help blend better.
  4. Taste the mix to check if it needs more sugar or lemon and adjust accordingly.
  5. Pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion during freezing.
  6. Insert the popsicle sticks and put everything in the freezer for at least 4-5 hours, better if overnight.
  7. Once frozen, to easily remove the popsicles from the molds you can briefly run them under warm water.
  8. Serve your watermelon popsicles as a refreshing dessert or as a snack on hot days.

Watermelon is made up of 90% water, making it perfect for staying hydrated during the summer. Also, the presence of lemon adds a note of freshness and helps to balance the sweetness of the fruit.
