Water Muffins

Water muffins are a lighter variant of classic muffins. Perfect for those who are lactose intolerant or for those who want to reduce their fat intake. Here is a simple recipe to make them.

Ingredients

  • 250 g of flour
  • 150 g of sugar
  • 1 packet of baking powder
  • 100 ml of seed oil
  • 200 ml of water
  • 1 pinch of salt
  • Flavoring of choice (vanilla, lemon or orange zest, etc.)
  • (Optional) Add-ins such as chocolate chips, nuts, or blueberries

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, mix the dry ingredients: flour, sugar, baking powder, and salt.
  3. Add the oil and mix until you have a sandy mixture.
  4. Pour in the water and chosen flavoring, mix until the batter is smooth and without lumps.
  5. If you want, you can now add extra ingredients like chocolate chips or nuts.
  6. Fill the muffin cups to about 2/3 of their height.
  7. Bake for about 20-25 minutes or until the muffins are golden and a toothpick inserted in the center of a muffin comes out clean.
  8. Let the muffins cool for a few minutes in the pan, then move them to a wire rack to complete cooling.

Curiosity

This is a versatile recipe and lends itself to many variations. If you want an Italian touch, you can add grated organic lemon zest or toasted and chopped almonds to our recipe for a crunchy touch. And to stay on theme with Italian sweets, why not try adding a bit of cold espresso to the batter for a bolder taste?

I hope this recipe is to your liking and that you can enjoy delicious water muffins!
