Coffee Water Cake

Ingredients
- 250 g of all-purpose flour
- 200 g of sugar
- 250 ml of water
- 8 g of baking powder
- 60 ml of vegetable oil (such as sunflower or corn)
- 2 tablespoons of instant coffee (or a small cup of cooled espresso coffee)
- A pinch of salt
Preparation
- Preheat the oven to 180 °C.
- In a large bowl, sift the flour with the baking powder and a pinch of salt.
- In another bowl, mix warm water with sugar until it is completely dissolved.
- Add the instant coffee to the sugar water and stir until completely dissolved (you can also use cooled espresso coffee).
- Gradually pour in the oil while continuing to stir to emulsify the ingredients.
- Gradually incorporate the liquid ingredients into the dry ingredients, stirring with a whisk or spatula to prevent lumps.
- Once you have a smooth mixture, pour the batter into a previously buttered and floured pan, or lined with parchment paper.
- Bake for about 35-40 minutes. To check doneness, insert a skewer in the center of the cake: if it comes out dry, the cake is ready.
- Remove from the oven and let it cool completely before removing from the pan.
The coffee water cake is ready! Serve it with a simple dusting of powdered sugar or, if you prefer, with a chocolate icing for an extra touch.
