Coffee Water Cake

I can provide you with the recipe for the coffee water cake, a dessert without butter and dairy that manages to be soft and delicious nonetheless. Here I present a simple version that you can prepare with ingredients you probably already have in your kitchen.

Ingredients

  • 250 g of all-purpose flour
  • 200 g of sugar
  • 250 ml of water
  • 8 g of baking powder
  • 60 ml of vegetable oil (such as sunflower or corn)
  • 2 tablespoons of instant coffee (or a small cup of cooled espresso coffee)
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C.
  2. In a large bowl, sift the flour with the baking powder and a pinch of salt.
  3. In another bowl, mix warm water with sugar until it is completely dissolved.
  4. Add the instant coffee to the sugar water and stir until completely dissolved (you can also use cooled espresso coffee).
  5. Gradually pour in the oil while continuing to stir to emulsify the ingredients.
  6. Gradually incorporate the liquid ingredients into the dry ingredients, stirring with a whisk or spatula to prevent lumps.
  7. Once you have a smooth mixture, pour the batter into a previously buttered and floured pan, or lined with parchment paper.
  8. Bake for about 35-40 minutes. To check doneness, insert a skewer in the center of the cake: if it comes out dry, the cake is ready.
  9. Remove from the oven and let it cool completely before removing from the pan.

The coffee water cake is ready! Serve it with a simple dusting of powdered sugar or, if you prefer, with a chocolate icing for an extra touch.
