Warm-hearted Fondant

The warm-hearted fondant is a classic and irresistible chocolate dessert, perfect to conclude a romantic dinner or to pamper oneself with something sweet. Here is the recipe:

Ingredients

  • 100 g of good quality dark chocolate
  • 100 g of butter (plus a little more for buttering the molds)
  • 2 whole eggs
  • 2 yolks
  • 60 g of sugar
  • 40 g of flour (plus a little more for flouring the molds)
  • A pinch of salt

Preparation

  1. Preheat the oven to 200 °C.
  2. Butter and lightly flour four soufflé or muffin molds, shaking out the excess flour.
  3. In a heat-resistant bowl, melt the chocolate pieces and butter in a double boiler, stirring until smooth and uniform.
  4. In another bowl, whisk the whole eggs, yolks, and sugar with an electric mixer until they become frothy and light.
  5. Gently incorporate the melted chocolate into the egg mixture, mixing from the bottom up so as not to deflate it.
  6. Add the sifted flour and a pinch of salt, mixing gently to obtain a homogeneous mixture.
  7. Fill the molds about 2/3 full and bake in the oven for about 12 minutes. The time can vary depending on the oven and the thickness of the molds, so keep an eye on them: the outside must be cooked, but the inside still soft.
  8. Remove the fondants from the oven and let them rest for a minute before unmolding them onto a small plate.
  9. Serve immediately while the heart is still flowing and warm.

The warm-hearted fondant has a surprise effect because from the outside it looks like a simple chocolate cake, but as soon as you take the first spoonful, you discover the soft and fluid heart that oozes out. This effect is achieved through precise cooking that sets the outside but leaves the inside not fully cooked.
