Walnut Financiers with Peach Jam

Ingredients

  • 100 g of finely chopped walnuts
  • 150 g of powdered sugar
  • 50 g of flour
  • 100 g of melted butter
  • 4 egg whites
  • A pinch of salt
  • Peach jam
  • Optional: grated lemon zest or a tablespoon of Amaretto di Saronno for an Italian touch

Preparation

  1. Preheat the oven to 180 °C.

  2. In a bowl, mix the finely chopped walnuts with the powdered sugar and flour.

  3. Melt the butter and let it cool down.

  4. In another bowl, whip the egg whites with a pinch of salt until they form a frothy mixture.

  5. Gently fold the whipped egg whites into the mixture of walnuts, powdered sugar, and flour, mixing from the bottom up to keep them airy.

  6. Add the cooled melted butter and, if desired, the grated lemon zest or Amaretto di Saronno, and combine everything with gentle movements.

  7. Pour the mixture into Financier molds or a buttered and floured muffin tin, filling them about 2/3 full.

  8. Add a teaspoon of peach jam to the center of each Financier.

  9. Bake for about 15-20 minutes or until the Financiers are golden.

  10. Remove from the oven and let cool before unmolding.

Financiers are small cakes that, according to tradition, take their name from the shape which resembles the badges used by the Finance Military Corps in the 19th century in Piedmont. With their soft texture and the distinctive flavor given by the nuts, they are perfectly suited to be accompanied by jams and creams.
