Walnut and Chocolate Muffins

Ingredients
- 250 g of flour
- 100 g of sugar
- 2 eggs
- 80 g of melted butter
- 120 ml of milk
- 1 packet of baking powder
- 100 g of dark chocolate
- 80 g of chopped walnuts
- 1 pinch of salt
- 1 teaspoon of vanilla extract (optional)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by greasing it or lining it with paper liners.
- In a bowl, combine flour, baking powder, and a pinch of salt.
- In a larger bowl, whisk the eggs with the sugar until light and fluffy.
- Add the warm melted butter and milk to the egg and sugar mixture, mixing well.
- Fold in the flour, baking powder, and salt mix, stirring as little as possible, just until the ingredients are barely combined.
- Transfer the dark chocolate onto a cutting board and, with a knife, chop it into not too small pieces; then add it to the batter along with the chopped walnuts.
- Fill the paper liners about 2/3 of their height with the batter.
- Bake the muffins for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Remove the muffins from the oven and let them cool on a rack before serving.
