Waffle sandwich

Ingredients for the waffles:

  • 250 g of all-purpose flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 tablespoon of sugar
  • 1/2 teaspoon of salt
  • 2 eggs, separated
  • 450 ml of buttermilk (or milk to which you have added a tablespoon of white vinegar or lemon to simulate buttermilk)
  • 100 g of unsalted butter, melted
  • 1 teaspoon of vanilla extract

Ingredients for the filling:

  • Deli meats of your choice (ham, turkey, salami)
  • Cheese of your choice (cheddar, gouda, mozzarella)
  • Extra condiments as desired (mayonnaise, mustard, honey, etc.)

Preparation

  1. In a large bowl, mix the flour, baking powder, baking soda, sugar, and salt.
  2. In another bowl, beat the egg yolks with the buttermilk, melted butter, and vanilla extract until you get a homogeneous mixture.
  3. Whip the egg whites in a separate bowl until they are frothy and firm.
  4. Gently fold the liquid ingredients mixture into the dry ingredients, being careful to mix gently.
  5. Carefully fold the beaten egg whites into the batter, trying not to deflate them to keep the batter soft and airy.
  6. Heat the waffle iron and lightly grease with oil or butter. Pour the recommended amount of batter for your waffle iron and cook until the waffles are golden and crispy.
  7. Cut the waffles into 4 squares (if your waffle iron makes round waffles, divide them in half) and let them cool slightly.
  8. Assemble the sandwich by stacking a waffle square, then the deli meats and chosen cheese, and if you wish, add other condiments. Top with another waffle square.
  9. If you prefer, you can put the Waffle Sandwich back in the open waffle iron, or on a panini press for a few minutes to slightly melt the cheese.
