Wafer Nougat

Wafer nougat is a delicious variation of the classic nougat, adding a pleasing contrast in texture through the addition of crispy waffles. Here’s how to prepare this delightful sweet.

Ingredients

  • 300 g of dark chocolate
  • 100 g of milk chocolate
  • 200 g of toasted hazelnuts
  • 100 g of wildflower honey
  • 30 g of butter
  • 200 g of hazelnut wafers (or plain wafers)
  • a pinch of salt

Preparation

  1. Start by toasting the hazelnuts in the oven at 160 degrees for about 10 minutes, then let them cool and remove the skin by rubbing them between your hands.
  2. Melt the dark chocolate and the milk chocolate cut into small pieces in a double boiler, then add the butter and honey, stirring until smooth. Add a pinch of salt to enhance the flavor.
  3. Coarsely chop the hazelnuts and add them to the melted chocolate.
  4. Prepare a loaf pan by lining it with parchment paper (you can also use a disposable aluminum container).
  5. Pour a first layer of chocolate and hazelnuts into the mold and then place a layer of wafers. Continue alternating layers until all ingredients are used up, finishing with chocolate.
  6. Allow the wafer nougat to cool for a few hours, better if you let it rest in the refrigerator overnight, to allow the chocolate to solidify well.
  7. Once the nougat is well chilled, remove it from the mold and cut it into slices to serve.

Curiosity

Nougat, in general, is a very ancient sweet that dates back at least to the time of the Romans, famous in various parts of Italy and often a protagonist during the holidays, especially Christmas. Wafer nougat is a modern twist that introduces crunchy elements into the softness of chocolate and hazelnuts.

If you don’t have hazelnut wafers, you can use chocolate wafers or neutral ones, according to your taste. For a lighter version, some variations involve using more bitter chocolate or reducing the amount of butter and honey. The important thing is to maintain the alternation between the creaminess of the chocolate and the crunchiness of the wafers that makes this dessert so special!
