Vietnamese Spring Rolls with Sweet and Sour Sauce

Vietnamese spring rolls, also known as “Goi Cuon,” are a light and refreshing dish typical of Vietnamese cuisine. To add an Italian touch to this recipe, we can think of using typical Italian ingredients in the stuffing of the rolls, such as fresh basil or prosciutto in addition to the traditional ingredients. But here is the basic recipe for Vietnamese spring rolls with sweet and sour sauce:

Ingredients

For the spring rolls:

  • 12 Vietnamese rice paper sheets
  • 100 g of rice vermicelli
  • 12 shrimps, cooked and cut in half lengthwise
  • 1 cup of thinly sliced lettuce
  • 1 cup of fresh aromatic herbs (mint, basil, coriander)
  • 1 carrot, julienned

For the sweet and sour sauce:

  • 2 tablespoons of fish sauce
  • 2 tablespoons of water
  • 1 tablespoon of fresh lime juice
  • 1 teaspoon of sugar
  • 1 clove of garlic, finely chopped
  • Fresh chili or chili flakes (to taste)

Preparation

  1. Prepare all the ingredients before assembling the rolls. Soak the rice vermicelli in hot water for about 10 minutes, then drain and set aside.
  2. For each rice paper sheet, briefly dip it in hot water until it becomes soft and pliable. Spread the rice paper out on a damp cloth.
  3. On the side closest to you of the rice paper, place a bit of vermicelli, then on top some lettuce, carrots, and aromatic herbs. Add two shrimp halves with the cut side facing up.
  4. Roll the rice paper over the ingredients, fold the sides inwards, and continue to wrap tightly, as if you were making a burrito.
  5. Repeat the operation with the other rice paper sheets.

Sweet and Sour Sauce

  1. For the sweet and sour sauce, mix the fish sauce, water, lime juice, sugar, chopped garlic, and chili to your taste in a small bowl.
  2. Make sure the sugar is completely dissolved and the sauce is homogeneous.

Serve your fresh Vietnamese spring rolls accompanied by the sweet and sour sauce.
