Potage Parmentier
17/11/2023Potage Parmentier is a classic French leek and potato soup. Here is an Italian version of the recipe:
Ingredients
- 500 g of potatoes
- 3 leeks (white part only)
- 1 liter of chicken or vegetable broth
- 30 g of butter
- 150 ml of fresh cream
- Salt and pepper to taste
- Chopped chives for garnish
Preparation
- Start by cleaning the leeks and slicing them into rounds. Peel the potatoes and cut them into cubes.
- In a large saucepan, melt the butter and sauté the leeks until they are soft but not colored.
- Add the potatoes to the saucepan and pour in the broth. Bring to a boil and then reduce the heat, simmering for about 20-30 minutes or until the potatoes are soft.
- Once the potatoes are cooked, use an immersion blender to blend everything into a smooth cream.
- Check the consistency, adding more broth if the potage is too thick.
- Add the cream, mix well, and heat for a few minutes without boiling.
- Taste and adjust the salt and pepper according to your taste.
- Serve hot, garnishing with chopped chives.
French tradition calls for this dish to be rather simple, but you can add an Italian touch with a drizzle of raw extra virgin olive oil when serving, or, if you prefer a richer flavor, with some Parmesan shavings.
