Vermicelli with Mussels and Clams

Ingredients

  • 500 g of vermicelli or thin spaghetti
  • 500 g of fresh mussels, cleaned
  • 500 g of fresh clams, cleaned
  • 3 cloves of garlic
  • Chopped fresh parsley
  • Fresh red chili pepper or flakes (to taste)
  • 1 glass of dry white wine
  • Extra virgin olive oil
  • Salt to taste

Preparation

  1. In a large skillet, heat the olive oil with the whole garlic cloves to flavor the oil. If you desire a spicy touch, also add the chili pepper.

  2. Once the garlic is golden, remove it from the oil (or leave it in, as desired) and add the mussels and clams. Stir well, then add the white wine.

  3. Cover the skillet with a lid and let cook for about 5-7 minutes or until the shells open. Discard any shell that remains closed.

  4. Meanwhile, cook the vermicelli in plenty of salted water following the instructions on the package. Try to cook the pasta al dente as it will continue cooking for a minute with the seafood.

  5. When the pasta is ready, drain it and transfer it to the skillet with the seafood, adding the chopped parsley.

  6. Toss everything together to blend the flavors well, adding a pinch of salt if necessary.

  7. Plate the vermicelli ensuring that each serving gets a fair distribution of mussels and clams.
