Black Venere Rice Salad with Salmon

The Venere rice salad with salmon is a nutritious and refined dish that combines the rich flavor of whole grain rice with the freshness of salmon. Here’s how to prepare it.

Ingredients

  • 200g of Venere rice
  • 200g of smoked salmon
  • 1 ripe avocado
  • 100g of cherry tomatoes
  • 1 fresh spring onion
  • Juice of 1 lemon
  • Extra virgin olive oil as needed
  • Salt and pepper as needed
  • A sprig of fresh dill (optional)

Preparation

  1. Start by cooking the Venere rice. It usually takes about 30 to 40 minutes to cook in slightly salted boiling water. Make sure to follow the instructions on the package for exact timings.
  2. In the meantime, cut the smoked salmon into strips or cubes, according to your preference.
  3. Peel and dice the avocado and sprinkle it with some lemon juice to prevent oxidation.
  4. Cut the cherry tomatoes in halves or quarters.
  5. Thinly slice the spring onion.
  6. Once the rice is cooked, drain it and let it cool down. You can speed up the process by running the rice under cold water after draining, then let it drip dry thoroughly.
  7. In a large bowl, combine the cooled Venere rice with the salmon, avocado cubes, cherry tomatoes, and sliced spring onion. Dress with extra virgin olive oil, lemon juice, salt, pepper and mix well.
  8. Garnish with chopped fresh dill if you wish, to add a particular flavor to the dish.

Let it sit for a few minutes before serving. This salad can be enjoyed cold and is perfect for a summer lunch or as a one-dish meal.
