Vegetarian Toast

Ingredients

  • 2 slices of whole wheat or rye bread
  • 1 ripe avocado
  • 1 medium tomato

Preparation

  1. Toast the slices of bread until golden and crispy.
  2. In the meantime, cut the avocado in half, remove the pit, and with the help of a spoon scoop out the pulp. Mash the avocado pulp with a fork in a bowl, add lemon juice, and mix. Season with salt and pepper.
  3. Wash and cut the tomato into thin slices.
  4. Spread the avocado cream on the two slices of toasted bread.
  5. Arrange the tomato slices on top. If you like, add a drizzle of extra virgin olive oil.
  6. If desired, add the spreadable vegan cheese.
  7. Garnish with basil leaves or arugula for a touch of freshness and an additional layer of flavor.
  8. Serve immediately.
