Vegetarian Toast

Ingredients
- 2 slices of whole wheat or rye bread
- 1 ripe avocado
- 1 medium tomato
- 1 teaspoon of lemon juice
- Salt and pepper to taste
- Extra virgin olive oil (optional)
- A few leaves of fresh basil or arugula (optional)
- Spreadable vegan fresh cheese (optional, for a richer version)
Preparation
- Toast the slices of bread until golden and crispy.
- In the meantime, cut the avocado in half, remove the pit, and with the help of a spoon scoop out the pulp. Mash the avocado pulp with a fork in a bowl, add lemon juice, and mix. Season with salt and pepper.
- Wash and cut the tomato into thin slices.
- Spread the avocado cream on the two slices of toasted bread.
- Arrange the tomato slices on top. If you like, add a drizzle of extra virgin olive oil.
- If desired, add the spreadable vegan cheese.
- Garnish with basil leaves or arugula for a touch of freshness and an additional layer of flavor.
- Serve immediately.
