Savory Vegetarian Log
17/11/2023The savory vegetarian log is an excellent idea for an appetizer or a unique and decorative second course. I can recommend a version with puff pastry and a vegetable filling, enriched with cheese for a richer flavor.
Ingredients
- 1 rectangular puff pastry sheet
- 200 g of fresh spinach
- 150 g of ricotta
- 100 g of feta cheese
- 1 zucchini
- 1 carrot
- Salt and pepper to taste
- Nutmeg to taste
- Extra virgin olive oil
- 1 egg for brushing the puff pastry
Preparation
- Preheat the oven to 200 °C.
- Start by preparing the filling: wash the spinach and let it wilt in a pan with a drizzle of oil and a pinch of salt, then squeeze it well and chop it coarsely.
- Grate the zucchini and carrot, and sauté the vegetables in a pan with a drizzle of oil for a few minutes, until they soften.
- In a bowl, mix the spinach, sautéed vegetables, ricotta, and crumbled feta cheese. Taste and adjust the seasoning with salt, pepper, and nutmeg.
- Roll out the puff pastry and spread the vegetable filling over it, leaving a border of about 2 cm.
- Roll the puff pastry onto itself starting from the long side, seal the edges well and fold the ends under the roll to form the log.
- With a sharp knife, make crosswise cuts on the surface to give the typical appearance of tree bark.
- Brush the beaten egg over the surface to achieve an even golden color when baking.
- Bake the savory log for about 25-30 minutes, or until it is golden brown and crispy.
- Let it cool slightly before transferring it to a serving dish and serving.
You can decorate the log with some rosemary sprigs or other aromatic herbs to give an even more natural touch. This is a base, but you can get creative with the filling: add roasted peppers, chopped olives, sun-dried tomatoes or any other vegetable you like.
To transform it into a completely Italian dish, you could include a Mediterranean vegetable filling such as grilled eggplant, cherry tomatoes, olives, and a bit of pesto to season everything. Remember that there are many vegetarian variations, and you can play with the ingredients depending on the season and your personal tastes.
