Savory Vegetarian Log

The savory vegetarian log is an excellent idea for an appetizer or a unique and decorative second course. I can recommend a version with puff pastry and a vegetable filling, enriched with cheese for a richer flavor.

Ingredients

  • 1 rectangular puff pastry sheet
  • 200 g of fresh spinach
  • 150 g of ricotta
  • 100 g of feta cheese
  • 1 zucchini
  • 1 carrot
  • Salt and pepper to taste
  • Nutmeg to taste
  • Extra virgin olive oil
  • 1 egg for brushing the puff pastry

Preparation

  1. Preheat the oven to 200 °C.
  2. Start by preparing the filling: wash the spinach and let it wilt in a pan with a drizzle of oil and a pinch of salt, then squeeze it well and chop it coarsely.
  3. Grate the zucchini and carrot, and sauté the vegetables in a pan with a drizzle of oil for a few minutes, until they soften.
  4. In a bowl, mix the spinach, sautéed vegetables, ricotta, and crumbled feta cheese. Taste and adjust the seasoning with salt, pepper, and nutmeg.
  5. Roll out the puff pastry and spread the vegetable filling over it, leaving a border of about 2 cm.
  6. Roll the puff pastry onto itself starting from the long side, seal the edges well and fold the ends under the roll to form the log.
  7. With a sharp knife, make crosswise cuts on the surface to give the typical appearance of tree bark.
  8. Brush the beaten egg over the surface to achieve an even golden color when baking.
  9. Bake the savory log for about 25-30 minutes, or until it is golden brown and crispy.
  10. Let it cool slightly before transferring it to a serving dish and serving.

You can decorate the log with some rosemary sprigs or other aromatic herbs to give an even more natural touch. This is a base, but you can get creative with the filling: add roasted peppers, chopped olives, sun-dried tomatoes or any other vegetable you like.

To transform it into a completely Italian dish, you could include a Mediterranean vegetable filling such as grilled eggplant, cherry tomatoes, olives, and a bit of pesto to season everything. Remember that there are many vegetarian variations, and you can play with the ingredients depending on the season and your personal tastes.
