Vegetarian Kebab

Preparing a vegetarian kebab is a great way to enjoy the typical flavors of this specialty in a vegetable key. Here is a version that draws inspiration from Mediterranean flavors with an Italian twist.

Ingredients

  • 200 g of thinly sliced seitan or tempeh
  • 1 large onion, sliced
  • 1 red bell pepper, sliced
  • 200 g of cherry tomatoes, halved
  • 2 medium zucchinis, cut into sticks
  • Extra virgin olive oil
  • Salt and pepper to taste
  • 1 teaspoon of sweet paprika
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of ground coriander
  • 2 cloves of garlic, minced
  • A handful of fresh parsley, chopped
  • Pita bread or whole wheat tortillas
  • Yogurt sauce (combine Greek yogurt, a pinch of salt, garlic powder, and a few drops of lemon juice)
  • Tomato sauce (optional)

For an even more Italian touch, you could add typical grilled vegetables like eggplants or artichokes in oil.

Preparation

  1. In a large pan, heat a drizzle of olive oil and cook the onion and garlic until they become transparent.
  2. Add the seitan or tempeh and let it brown slightly.
  3. Add the bell pepper and zucchinis, and sauté everything until the vegetables start to soften.
  4. Add the cherry tomatoes, sweet paprika, cumin, coriander, salt, and pepper. Mix well and cook for another 5 minutes.
  5. Meanwhile, heat the pitas or tortillas in another pan or in the oven.
  6. Assemble the kebabs by placing the seitan and vegetable mixture on the pita or tortilla base.
  7. Add the prepared sauces and a sprinkle of fresh parsley.
  8. Roll the bread tightly around the filling and, if you like, you can heat it again to make the bread crunchier.
