Ingredients
- 1 package of fillo dough
- 200 g of vegetables of choice (e.g., spinach, zucchini, bell peppers, carrots)
- 1 small onion
- 100 g of feta cheese (or other soft cheese)
- Salt and pepper to taste
- Extra virgin olive oil or melted butter to taste
- Spices of choice (such as cumin, coriander, paprika)
- Sesame or poppy seeds for garnish (optional)
Preparation
- Start by cutting the selected vegetables into small pieces and sauté them in a pan with a drizzle of oil and chopped onion until they become soft. You can add the spices you prefer to give more flavor.
- Crumble the feta cheese and mix it with the cooked vegetables, adjusting for salt and pepper.
- Carefully unroll the fillo dough. Fillo dough dries out quickly, so cover the sheets you’re not using with a damp cloth while working.
- Cut the fillo dough into strips about 10 cm wide. Place a spoonful of the vegetable and cheese filling on one end of the strip.
- Fold over the part with the filling to form a triangle, and continue folding the triangle over itself along the strip, maintaining the shape. Make sure to seal the edges well to prevent the filling from escaping during baking.
- Place the triangles on a baking tray lined with parchment paper, brush them with oil or melted butter, and sprinkle with sesame or poppy seeds if desired.
- Bake in a preheated oven at 180 °C for about 15-20 minutes or until they are golden and crispy.
