Gratin of vegetables, squid, and shrimp

Here’s a recipe for making a vegetable gratin with squid and shrimp, enriched with an Italian touch to make the dish even more delicious.

Ingredients

  • 1 large zucchini
  • 1 red bell pepper
  • 1 small eggplant
  • 300 g of cleaned squid cut into rings
  • 200 g of peeled and cleaned shrimp
  • 2 cloves of garlic
  • Chopped fresh parsley (optional)
  • 100 g of breadcrumbs
  • 50 g of grated Parmesan cheese
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Preheat the oven to 200 °C.
  2. Wash and cut the vegetables: dice the zucchini and eggplant, and cut the bell pepper into strips. Season them lightly with salt and set aside.
  3. In a large pan, sauté a clove of garlic with a drizzle of extra virgin olive oil. Add the vegetables and sauté them until they are slightly softened. Remove the garlic and transfer the vegetables to a baking dish.
  4. In the same pan, cook the squid and shrimp with another chopped garlic clove until they turn pink and are slightly golden. Season them with salt and pepper to taste.
  5. Add the chopped fresh parsley and mix well.
  6. Spread the squid and shrimp over the vegetables in the baking dish.
  7. In a separate bowl, mix breadcrumbs and grated Parmesan with a drizzle of oil to obtain a homogeneous mixture.
  8. Sprinkle the breadcrumb and Parmesan mixture over the vegetables and seafood in the baking dish.
  9. Bake for about 15-20 minutes, or until the surface is golden brown and crispy.
  10. Remove from the oven and let cool for a few minutes before serving.

You can serve this dish with a sprinkle of chopped fresh parsley on top for a touch of color and freshness.
