Vegetable Squares

Vegetable squares are a healthy and colorful dish, ideal as an appetizer or side dish. Here’s the recipe.

Ingredients

  • 2 zucchinis
  • 2 carrots
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 200 g of flour
  • 3 eggs
  • 50 ml of extra virgin olive oil
  • 100 ml of milk
  • 100 g of grated cheese (Parmesan or Pecorino)
  • Salt and pepper to taste
  • 1 packet of baking powder for savory cakes
  • Butter and breadcrumbs for the baking dish

Preparation

  1. Start by washing and cutting the vegetables into small, uniform cubes.
  2. Beat the eggs in a bowl and add the oil and milk. Mix well.
  3. In another bowl, sift the flour with the baking powder and add the grated cheese, salt, and pepper.
  4. Combine the vegetables with the egg mixture and then incorporate the dry ingredients, mixing gently to avoid forming lumps.
  5. Butter a rectangular baking dish and coat it with breadcrumbs, then pour the mixture in and level the surface.
  6. Bake in a preheated oven at 180 °C for about 30-40 minutes or until the surface is golden and a toothpick inserted into the center comes out clean.
  7. Once baked, let it cool and cut the vegetable squares into the desired size.

Vegetable squares can be customized according to preferences or the seasonality of the vegetables. For example, in autumn you can use pumpkin and mushrooms, while in spring asparagus and peas. This dish is a great way to get even the little ones to eat their vegetables and can be served both hot and cold.
