Vegetable muffins are a delicious and healthy idea for an appetizer or a snack. Here’s how to prepare them by adding an Italian touch to the concept:

Ingredients

  • 200 g of flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • Salt to taste
  • Black pepper to taste
  • 2 eggs
  • 100 ml of milk
  • 50 ml of extra virgin olive oil
  • 200 g of vegetables of your choice (zucchini, peppers, spinach, sun-dried tomatoes, etc.)
  • 100 g of grated cheese of your choice (pecorino, parmesan, etc.)
  • Aromatic herbs to taste (basil, thyme, oregano, etc.)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin with paper liners or grease it with a little oil.
  2. In a large bowl, sift the flour with the baking powder and baking soda. Add salt and pepper to your liking.
  3. In another bowl, beat the eggs with the milk and olive oil. Add the liquid mixture to the dry ingredients, stirring just enough to combine.
  4. Cut the selected vegetables into small cubes and add them to the batter along with the grated cheese and chopped herbs.
  5. Gently mix everything together to evenly distribute the vegetables and cheese.
  6. Fill each muffin cup 3/4 full with the batter.
  7. Bake the muffins for about 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  8. Remove the muffins from the oven and let them cool on a rack.

Trivia

Savory muffins are a classic of Anglo-Saxon cuisine, but with the addition of Mediterranean vegetables and Italian cheeses, they become a delicious compromise between tradition and innovation. Perfect for a picnic or as a snack on informal occasions.

You can vary the vegetables and cheeses according to the season and your personal tastes. Just remember to balance the moist and dry ingredients well to achieve the right muffin consistency. Enjoy your meal!
