Ingredients
- 200 g of flour
- 1 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- Salt to taste
- Black pepper to taste
- 2 eggs
- 100 ml of milk
- 50 ml of extra virgin olive oil
- 200 g of vegetables of your choice (zucchini, peppers, spinach, sun-dried tomatoes, etc.)
- 100 g of grated cheese of your choice (pecorino, parmesan, etc.)
- Aromatic herbs to taste (basil, thyme, oregano, etc.)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin with paper liners or grease it with a little oil.
- In a large bowl, sift the flour with the baking powder and baking soda. Add salt and pepper to your liking.
- In another bowl, beat the eggs with the milk and olive oil. Add the liquid mixture to the dry ingredients, stirring just enough to combine.
- Cut the selected vegetables into small cubes and add them to the batter along with the grated cheese and chopped herbs.
- Gently mix everything together to evenly distribute the vegetables and cheese.
- Fill each muffin cup 3/4 full with the batter.
- Bake the muffins for about 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and let them cool on a rack.
