Vegetable Curry

Vegetable curry is a hearty, aromatic, and flavorful dish. Here’s how you can prepare it:

Ingredients

  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 1 piece of fresh ginger (about 2 cm), chopped
  • Assortment of vegetables of your choice (potatoes, carrots, zucchini, peppers, peas, cauliflower, spinach, etc.), cut into pieces
  • 1 can of coconut milk
  • 2 tablespoons of curry paste (red, yellow, or green depending on the desired spiciness)
  • Sesame oil or sunflower oil for frying
  • Salt to taste
  • Fresh coriander (for garnish)
  • Basmati rice or naan bread (to serve)

Preparation

  1. In a large pot, heat the oil over medium heat and sauté the onion, garlic, and ginger until they are soft and fragrant.

  2. Add the curry paste and cook for one minute, stirring to combine and lightly toast the spices.

  3. Add the harder vegetables like potatoes and carrots first, letting them cook for a few minutes.

  4. Pour in the coconut milk and bring it to a light boil.

  5. Lower the heat and add the other vegetables. Simmer until the vegetables are tender but still firm, about 15-20 minutes. Adjust salt to taste.

  6. Meanwhile, prepare the basmati rice or warm the naan bread.

  7. Once the curry has reached the desired consistency and flavor, remove from the heat.

  8. Serve the vegetable curry garnished with fresh coriander and accompanied by basmati rice or naan bread.
