Strudel with vegetable cream

Ingredients
- 1 rectangular sheet of puff pastry
- 200 g of fresh or frozen spinach
- 100 g of fresh ricotta
- 50 g of grated Parmesan cheese
- 1 medium zucchini
- 1 medium carrot
- 1 small potato
- 1 small leek
- Salt and pepper to taste
- Nutmeg to taste
- 1 egg (for brushing the pastry)
- Extra virgin olive oil
Preparation

Start with preparing the vegetables. Clean and wash all the vegetables. Dice the zucchini, carrot, potato, and leek very small.

In a large pan, heat some oil and add the chopped vegetables. Sauté for a few minutes until they start to soften. Add the spinach and cook until wilted.

Season the vegetables with salt, pepper, and a grating of nutmeg. Let the vegetable mixture cool down.

In a bowl, mix the ricotta with the grated Parmesan cheese until you get a smooth cream. Combine the cheese cream with the cooled vegetables and mix well to blend all the ingredients.

Unroll the puff pastry and place it on a baking sheet lined with parchment paper.

Spread the vegetable and cream filling along the center of the puff pastry, leaving a free edge on each side.

Fold the sides of the puff pastry over the filling and gently roll up the strudel, sealing the edges at the end.

Brush the surface of the strudel with a beaten egg to achieve an even browning when baking.

Bake in a preheated oven at 180 °C for about 25-30 minutes or until the puff pastry is well browned and crispy.
