Vegetable Pie

The vegetable pie is a tasty and healthy dish, perfect for those who want to enjoy the goodness of vegetables in a different way. Here is the basic recipe to make an Italian vegetable pie:

Ingredients

  • 1 roll of puff pastry or shortcrust pastry (about 230-250g)
  • 2 zucchinis
  • 1 small eggplant
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots
  • 200g of ricotta cheese
  • 100g of grated Parmesan cheese
  • 2 eggs
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Aromatic herbs of choice (basil, thyme, oregano)

Preparation

  1. Start by preheating the oven to 180 °C (350 °F).
  2. Roll out the puff pastry or shortcrust pastry into a pie dish, previously greased or lined with parchment paper, making sure to create an edge.
  3. Prick the bottom with a fork to prevent it from puffing up during baking and place a sheet of parchment paper with some dry beans on top to blind bake the base. Bake for about 10 minutes.
  4. Meanwhile, wash and cut the vegetables into small cubes (for even cooking).
  5. Heat a drizzle of oil in a non-stick pan and sauté the vegetables until they are slightly golden and tender. Season with salt and pepper.
  6. In a bowl, mix the ricotta with the eggs, grated Parmesan cheese, salt, pepper, and aromatic herbs.
  7. Take the pastry base out of the oven, remove the beans and parchment paper, and spread the sautéed vegetables on the base.
  8. Pour the ricotta mixture over the vegetables and spread well to cover everything.
  9. Bake the vegetable pie at 180 °C for about 30-35 minutes or until the surface is golden and the filling is well cooked.
  10. Let it cool slightly before serving.
