Plumcake with Vegetables and Edamer Cheese

Ingredients
- 200 g of all-purpose flour
- 3 eggs
- 100 g of Edamer cheese
- 100 ml of milk
- 100 ml of vegetable oil
- 1 zucchini
- 1 carrot
- 1 small red bell pepper
- Half an onion
- 1 packet of baking powder for savory cakes
- Salt to taste
- Pepper to taste
Preparation
- Preheat the oven to 180°C (356°F).
- Wash and cut the vegetables into small cubes and lightly sauté the onion in a pan with a drizzle of oil, then add the other vegetables and cook for a few minutes. Let cool.
- In a bowl, beat the eggs with a pinch of salt and pepper. Add the milk and oil and continue to mix.
- Cut the Edamer cheese into small cubes.
- Incorporate the sifted flour and baking powder into the liquid mixture and stir until you have a homogeneous batter.
- Add the cubed Edamer cheese and the now cool vegetables, and mix everything together.
- Pour the mixture into a previously greased or parchment paper-lined plumcake mold.
- Bake for about 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool before unmolding and slicing.
