Vegetable and Cheese Tarts

Vegetable and cheese tarts are a simple, tasty, and versatile dish that can be customized with your favorite vegetables or whatever you have on hand. Here is a basic recipe to which you can add your personal touch.

Ingredients

  • 2 zucchinis
  • 2 carrots
  • 1 small eggplant
  • 200 g of hard cheese (such as Parmesan or Pecorino), grated
  • 2 eggs
  • Salt and pepper to taste
  • Extra virgin olive oil
  • Breadcrumbs as needed
  • Herbs of your choice (e.g., basil, thyme, parsley)

Preparazione

  1. Begin by washing and cutting the vegetables (zucchinis, carrots and eggplant) into small cubes.
  2. Heat a drizzle of extra virgin olive oil in a pan and sauté the vegetables until they are soft. Season with salt and pepper to taste.
  3. In a bowl, beat the eggs and add the grated cheese. Mix to create a homogeneous mixture.
  4. Add the cooked vegetables to the egg and cheese mixture. Add the finely chopped aromatic herbs and mix well.
  5. Prepare some muffin or tartlet molds by greasing them and sprinkling with breadcrumbs to prevent sticking.
  6. Fill each mold with the vegetable and cheese mixture, pressing down lightly to compact it.
  7. Sprinkle a thin layer of breadcrumbs over each tart to get a crispy crust.
  8. Bake in a preheated oven at 180 °C for about 20-25 minutes or until the tarts have turned a nice golden color on top.
  9. Let cool for a few minutes before removing the tarts from the molds.

The vegetable tarts can be customized in many ways. For example, by adding goat cheese to the mixture, you’ll get a fresher and slightly tangy taste.
