Vegan Coconut Cake

Here’s a simple recipe for a delicious and easy-to-make vegan coconut cake.

Ingredients

  • 200 g of wheat flour (or oat flour if you prefer a gluten-free version)
  • 150 g of brown sugar (you can also use agave syrup or another sweetener of your choice)
  • 50 g of desiccated coconut
  • 1 packet of baking powder
  • 100 ml of coconut oil (melted)
  • 250 ml of coconut milk
  • 1 teaspoon of vanilla extract (optional)
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C and grease a round baking pan with a bit of coconut oil and sprinkle it with flour to prevent sticking.
  2. In a large bowl, mix the flour, desiccated coconut, sugar, baking powder, and salt.
  3. In another bowl, combine the coconut milk, melted coconut oil, and vanilla extract, if using.
  4. Join the liquid ingredients with the dry ones and mix until you have a homogenous mixture.
  5. Pour the batter into the prepared pan and level with a spatula.
  6. Bake the cake for about 30-40 minutes or until a skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

This cake, thanks to the desiccated coconut and coconut milk, will have an intense exotic flavor and a particularly moist and soft texture. Instead of using traditional animal derivatives like milk and butter, this vegan version opts for plant-based ingredients while maintaining the same pleasurable sensation on the palate.
