Vegan Brownies

Vegan brownies are a delicious alternative to classic brownies for those following a vegan diet or for anyone wanting to avoid animal-derived ingredients. Here’s the recipe:

Ingredients

  • 200 g of vegan dark chocolate
  • 250 ml of plant milk (e.g., soy, almond, or oat)
  • 80 ml of coconut oil or another neutral vegetable oil
  • 200 g of brown sugar
  • 1 teaspoon of vanilla extract
  • 220 g of flour (you can use wheat flour or gluten-free substitutes)
  • 40 g of unsweetened cocoa powder
  • 1 teaspoon of baking powder
  • A pinch of salt
  • 100 g of walnuts or other nuts of your choice, chopped (optional)

Preparation

  1. Preheat the oven to 180 °C and line a square or rectangular baking tray with parchment paper.
  2. Melt the chocolate with the coconut oil in a double boiler or in the microwave, stirring until smooth. Allow to cool slightly.
  3. In a large bowl, combine the plant milk, sugar, and vanilla extract. Then add the melted chocolate and mix until everything is combined.
  4. In another bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Add the dry ingredients to the chocolate mixture and stir until you have a uniform batter. If desired, also fold in the chopped nuts.
  6. Pour the batter into the prepared tray and level the surface with a spatula.
  7. Bake for about 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs attached. Do not overbake to keep the inside soft and moist.
  8. Allow to cool completely in the tray before cutting into squares and serving.

Vegan brownies can be stored in an airtight container at room temperature for a few days if they don’t disappear sooner!
