Vegan Apple Cake

I will be happy to help you prepare a delicious vegan apple cake. Here is the recipe with an Italian twist, using easily available and healthy ingredients.

Ingredients

  • 300 g of type 00 or whole wheat flour
  • 200 g of brown sugar
  • 100 ml of seed oil or light olive oil
  • 200 ml of plant-based milk (soy, almond, rice, or oat)
  • 1 packet of baking powder
  • 1 pinch of salt
  • 1 teaspoon of ground cinnamon
  • 3-4 apples
  • Juice of 1/2 lemon
  • Icing sugar (optional, for decorating)
  • Vanilla (extract, seeds, or powder), optional

Preparation

  1. Preheat the oven to 180 °C and prepare a cake tin by oiling and flouring it or lining it with parchment paper.
  2. In a large bowl, mix the flour with the brown sugar, baking powder, salt, and cinnamon (add vanilla if you are using it).
  3. Peel the apples and cut them into small pieces or slices, then drizzle them with lemon juice to prevent oxidation.
  4. Add the oil and plant-based milk to the dry ingredients and mix until you have a smooth mixture.
  5. Gently fold the apples into the mixture, stirring to distribute them evenly.
  6. Pour the batter into the prepared tin and level it with a spatula.
  7. Bake for about 40-45 minutes. You can test if it’s ready by sticking a toothpick into the cake: if it comes out clean, the cake is done.
  8. Let the apple cake cool before removing it from the tin.
  9. If you wish, you can dust the surface with icing sugar before serving.

Curiosity

Apple cake is a classic of Italian home baking, and every family has its own variation of the recipe. The vegan version retains the comfort and authenticity of the original dessert, adapting it for those who follow a diet without animal derivatives. Cinnamon and vanilla are very popular spices in Italian pastry and pair beautifully with the sweet-tart flavor of the apples.
