Veal with Citrus
17/11/2023Veal with citrus is an elegant and fragrant dish that combines the tenderness of veal with the fresh aroma of citrus. Here is the recipe to prepare this delicious meal:
Ingredients
- 600 g of veal topside in one piece
- 2 untreated oranges
- 1 untreated lemon
- Flour as needed
- 40 g of butter
- 1 glass of white wine
- Broth as needed
- Salt and pepper as needed
- Extra virgin olive oil as needed
- Chopped parsley for garnish (optional)
Preparation
- Start by washing the citrus and drying them well. Then, grate the zest of one orange and the lemon, being careful not to take the bitter white part.
- Next, squeeze the juice of the oranges and lemon and set it aside.
- Cut the veal topside into slices about 1 cm thick, then lightly beat them with a meat mallet to flatten them.
- Lightly flour the veal slices.
- In a large pan, heat the oil and a knob of butter, then brown the floured slices on both sides until they are golden.
- Deglaze with white wine until the alcohol evaporates.
- Lower the heat and add the juice and grated zest of the citrus. Season with salt and pepper to taste.
- Cover and cook on low heat for about 15-20 minutes, adding broth if necessary to prevent the sauce from drying out too much.
- Once cooked, serve the veal with citrus on a plate and sprinkle with chopped fresh parsley, if desired.
