Veal with Citrus

Veal with citrus is an elegant and fragrant dish that combines the tenderness of veal with the fresh aroma of citrus. Here is the recipe to prepare this delicious meal:

Ingredients

  • 600 g of veal topside in one piece
  • 2 untreated oranges
  • 1 untreated lemon
  • Flour as needed
  • 40 g of butter
  • 1 glass of white wine
  • Broth as needed
  • Salt and pepper as needed
  • Extra virgin olive oil as needed
  • Chopped parsley for garnish (optional)

Preparation

  1. Start by washing the citrus and drying them well. Then, grate the zest of one orange and the lemon, being careful not to take the bitter white part.
  2. Next, squeeze the juice of the oranges and lemon and set it aside.
  3. Cut the veal topside into slices about 1 cm thick, then lightly beat them with a meat mallet to flatten them.
  4. Lightly flour the veal slices.
  5. In a large pan, heat the oil and a knob of butter, then brown the floured slices on both sides until they are golden.
  6. Deglaze with white wine until the alcohol evaporates.
  7. Lower the heat and add the juice and grated zest of the citrus. Season with salt and pepper to taste.
  8. Cover and cook on low heat for about 15-20 minutes, adding broth if necessary to prevent the sauce from drying out too much.
  9. Once cooked, serve the veal with citrus on a plate and sprinkle with chopped fresh parsley, if desired.
