Veal Strips with Peas

Ingredients

  • 400 g of veal (thin slices cut into strips)
  • 200 g of peas (fresh or frozen)
  • 1 small onion
  • Extra virgin olive oil
  • Salt and pepper to taste
  • A pinch of flour (optional)
  • Vegetable broth or water (if necessary)
  • Dry white wine (about one glass)
  • Fresh parsley (optional, for garnish)

Preparation

  1. Start by finely chopping the onion. In a large pan, heat a drizzle of extra virgin olive oil and sauté the onion until it becomes translucent.

  2. Meanwhile, if you want, you can lightly flour the veal strips. This step is optional, but it can help to create a light crust and thicken the sauce.

  3. Add the strips to the pan with the onion and let them brown until they take colour on all sides. At this point, deglaze with the white wine and let the alcohol evaporate.

  4. Add the peas, adjust the salt and pepper, and if necessary, add a little vegetable broth or water to prevent the sauce from drying out too much.

  5. Cook over moderate heat for about 10-15 minutes or until the peas are tender and the strips are cooked perfectly but still soft.

  6. Before serving, if you wish, decorate the dish with chopped fresh parsley.
