Veal Stew with Mushrooms

Here’s a recipe to prepare veal stew with mushrooms, which is a classic and comforting Italian dish.

Ingredients

  • 500 g of veal stew meat
  • 300 g of mushrooms (porcini or champignon)
  • 1 medium-large onion
  • 1 clove of garlic
  • Flour as needed
  • 150 ml of white wine
  • Meat broth as needed
  • 2 tablespoons of extra virgin olive oil
  • Salt and pepper as needed
  • Chopped fresh parsley for garnish (optional)
  • Rosemary (optional)

Preparation

  1. Start by cleaning the mushrooms and slicing or chopping them, then set them aside.
  2. Finely chop the onion and garlic clove.
  3. In a large pan, heat two tablespoons of oil and add the chopped onion and garlic, sautéing over medium heat until they become translucent.
  4. Lightly flour the veal stew pieces and add them to the pan to brown on all sides until they take on a slightly golden color.
  5. Deglaze with white wine and let the alcohol evaporate on high heat, then reduce the fire.
  6. Add the mushrooms to the pan and mix well.
  7. Add the meat broth just enough to barely cover the meat, then add a pinch of salt, pepper and if desired, a sprig of rosemary.
  8. Cover the pan and let simmer on low heat for about 1.5 hours, until the meat is tender and the sauce has thickened. If necessary, during cooking, add more broth to maintain the right level of moisture.
  9. Once the stew is ready, adjust salt and pepper and sprinkle with fresh chopped parsley before serving.

Depending on the season and availability, you can vary the type of mushrooms used and enrich the dish with other aromatic herbs to your liking.
