Veal Slices in Milk

Ingredients
- 4 veal slices (about 150 g each)
- 300 ml of whole milk
- 30 g of butter
- Flour, as needed for dusting the slices
- Salt and pepper, as needed
- Extra virgin olive oil, as needed
- (Optional) Nutmeg, a pinch
Preparation
- Begin by lightly flouring the veal slices on both sides. This will help create a light golden crust on the meat and thicken the sauce.
- Heat the butter and a drizzle of olive oil in a wide skillet over medium heat.
- When the butter has melted and starts to sizzle, add the veal slices and fry for about 2 minutes per side, until golden brown.
- Lower the heat and season the slices with salt and pepper to taste.
- Pour the milk over the meat, slowly, covering the meat. If you wish, you can add a pinch of nutmeg to further flavour the dish.
- Cover the skillet with a lid and cook over low heat for about 40-50 minutes. If the milk should dry out too much, add a little more during cooking.
- Turn the slices a couple of times during cooking so that they cook evenly.
- The dish is ready when the meat is tender and the milk has reduced to a thick and creamy sauce.
- Taste and, if necessary, adjust the seasoning.
