Veal Slices in Milk

Ingredients

  • 4 veal slices (about 150 g each)
  • 300 ml of whole milk
  • 30 g of butter
  • Flour, as needed for dusting the slices
  • Salt and pepper, as needed
  • Extra virgin olive oil, as needed
  • (Optional) Nutmeg, a pinch

Preparation

  1. Begin by lightly flouring the veal slices on both sides. This will help create a light golden crust on the meat and thicken the sauce.
  2. Heat the butter and a drizzle of olive oil in a wide skillet over medium heat.
  3. When the butter has melted and starts to sizzle, add the veal slices and fry for about 2 minutes per side, until golden brown.
  4. Lower the heat and season the slices with salt and pepper to taste.
  5. Pour the milk over the meat, slowly, covering the meat. If you wish, you can add a pinch of nutmeg to further flavour the dish.
  6. Cover the skillet with a lid and cook over low heat for about 40-50 minutes. If the milk should dry out too much, add a little more during cooking.
  7. Turn the slices a couple of times during cooking so that they cook evenly.
  8. The dish is ready when the meat is tender and the milk has reduced to a thick and creamy sauce.
  9. Taste and, if necessary, adjust the seasoning.
