Veal Scaloppine with Ham and Mushrooms

Veal scaloppine with ham and mushrooms is a delicious dish that is representative of Italian cuisine, combining the sweetness of veal with the intense flavor of ham and mushrooms. Here is the recipe:

Ingredients

  • 4 veal slices (scaloppine)
  • 4 slices of raw ham
  • 200 grams of fresh mushrooms (champignons or porcini)
  • 30 grams of butter
  • 1/2 glass of dry white wine
  • Extra virgin olive oil
  • Flour, as much as needed to flour the scaloppine
  • Salt and pepper to taste
  • Chopped parsley (optional) for garnish

Preparation

  1. Clean the mushrooms with a damp cloth or a brush, slice them, and set aside.
  2. Lightly flour the veal slices. Heat a pan with a drizzle of extra virgin olive oil and a piece of butter.
  3. When the butter has melted and begins to sizzle, place the floured scaloppine in the pan, and brown them on both sides for 1-2 minutes per side, then remove and set aside.
  4. In the same pan, add the remaining butter and briefly fry the mushrooms until they are well browned.
  5. Add the slices of raw ham to the mushrooms and let sauté for a minute.
  6. Deglaze with white wine and let the alcohol evaporate over high heat.
  7. Lower the flame, put the scaloppine back in the pan with the mushrooms and ham, and cook for about 5 more minutes, seasoning with salt and pepper to taste.
  8. If necessary, you can add a little water to prevent the sauce from drying out too much.
  9. Serve the scaloppine hot, with their cooking sauce and a sprinkle of chopped parsley for garnish.

Veal scaloppine with ham and mushrooms can be served with a side of vegetables or mashed potatoes. For an even more Italian touch, you might add a drizzle of raw extra virgin olive oil before serving. Enjoy your meal!

Curiosity

Have you ever heard about the close relationship between mushrooms and autumn in Italy? This is because mushrooms, especially porcini, are plentiful during the autumn months and are often the stars of typical dishes of this season, particularly in Piedmont and Tuscany. Of course, outside the season, cultivated mushrooms available all year round can be used.
