Veal Rolls with Ham and Cheese

Ingredients
- 4 thin veal slices
- 4 slices of raw ham
- 4 slices of cheese (scamorza, fontina, provolone or mozzarella, according to preference)
- Flour, as needed for dredging the rolls
- Extra virgin olive oil
- Salt and pepper, to taste
- White wine, about one glass
- Vegetable broth or water, as needed
- Chopped parsley, for garnish
- Optionally, chives to tie the rolls
Preparation

Gently pound the veal slices with a meat mallet to extend and thin them out. Season both sides with salt and pepper.

On each slice of meat, place a slice of ham and a slice of cheese, leaving a free margin around the edges.

Roll the veal starting from the narrower side, and if necessary, tie them with kitchen twine or close with toothpicks, or if you prefer, use chives for a more sophisticated and natural touch.

Dredge the rolls in flour, being careful to remove the excess.

Heat a drizzle of olive oil in a pan and lay in the rolls, browning them on all sides.

Deglaze with the white wine and let the alcohol evaporate.

Add a bit of vegetable broth or water to continue the cooking without drying out the sauce too much.

Cook the rolls over medium-low heat with the lid on for about 15-20 minutes, adding broth if it dries out too much.

Make sure they are cooked through and the meat is tender, adjusting the seasoning with salt and pepper if necessary.

Plate the rolls and sprinkle them with fresh chopped parsley for a touch of color and freshness.
