Vanilla and Strawberry Roll

Ingredients
- 4 eggs
- 120g of sugar
- 120g of all-purpose flour
- 1 teaspoon of vanilla extract
- 250ml of whipping cream
- 2 tablespoons of powdered sugar (plus a little more for dusting)
- 300g of fresh strawberries
- Powdered sugar for decorating (optional)
Preparation
- Preheat the oven to 180 °C and line a baking tray with parchment paper.
- In a large bowl, beat the eggs with the sugar until they become light and frothy. This may take about 5-7 minutes with an electric mixer.
- Gently fold the sifted flour and vanilla extract into the egg and sugar mixture, taking care not to deflate the mixture.
- Pour the batter into the prepared tray and level with a spatula.
- Bake in the oven for about 8-10 minutes, or until golden brown and a tester inserted in the center comes out clean.
- Meanwhile, spread out a piece of parchment paper on a flat surface and lightly dust it with powdered sugar.
- When the sponge base is ready, flip it onto the sugared parchment paper. Gently remove the parchment paper in which it was baked.
- Roll up the base with the parchment paper, starting from the short side, and let it cool completely.
- While the base cools, whip the cream with the two tablespoons of powdered sugar until it forms a frothy and firm mixture.
- Clean the strawberries and cut them into small pieces.
- When the base is cold, gently unroll it and spread the whipped cream over it. Evenly distribute the chopped strawberries.
- Roll up the base again with the cream and strawberries without the parchment paper.
- Place the roll in the refrigerator for at least one hour before serving.
- Before serving, dust the roll with an additional layer of powdered sugar, if desired, and decorate with fresh strawberries.
