Vanilla and chocolate mousse cake

I will describe how to prepare a Vanilla and Chocolate Mousse Cake. This dessert is a real pleasure for the senses, with two soft and creamy layers that perfectly match.

Ingredients

For the chocolate base:

  • 200 g of chocolate biscuits
  • 100 g of melted butter

For the chocolate mousse:

  • 200 g of dark chocolate
  • 3 egg yolks
  • 2 tablespoons of sugar
  • 250 ml of whipping cream

For the vanilla mousse:

  • 200 ml of whipping cream
  • 1 vanilla pod (or 1 teaspoon of vanilla extract)
  • 3 egg yolks
  • 2 tablespoons of sugar
  • 3 sheets of gelatin (or equivalent powdered gelatin)

Preparation

  1. Start with the chocolate base. Finely chop the biscuits and mix them with the melted butter until you have a homogeneous mixture. Spread the dough in a springform pan, pressing well on the bottom. Put in the fridge to firm up for at least 30 minutes.

  2. Prepare the chocolate mousse. Melt the chocolate in a bain-marie and let it cool. In a bowl, whip the yolks with the sugar until they become light and fluffy. Gently fold the melted chocolate into the yolks. In another bowl, whip the cream until stiff and fold it into the chocolate mixture. Pour the mousse over the biscuit base and refrigerate to firm up for about 1 hour.

  3. While the chocolate mousse is firming, prepare the vanilla mousse. Soak the gelatin sheets in cold water for about 10 minutes. Whip the cream and set aside. In a small pot, heat some cream with the split vanilla pod (or with vanilla extract) and the scraped seeds. In a bowl, whip the yolks with the sugar and then add the hot cream with vanilla. Put the mixture on low heat and warm until it slightly thickens, without boiling.

  4. Squeeze out the softened gelatin and dissolve it in the warm vanilla mixture. Let it cool and then gently incorporate the whipped cream. Pour the vanilla mousse over the set chocolate layer and place in the refrigerator for at least 4 hours or until it is well firmed.

  5. Before serving, you can decorate the mousse cake with chocolate shavings, fresh fruit, or whipped cream dollops.
