Vanilla and Chocolate Cookie Ice Creams

Ingredients

  • 500 ml of vanilla ice cream
  • 12 chocolate cookies of your choice (such as Oreo cookies or cocoa cookies)
  • 150 g of dark chocolate
  • 2 teaspoons of coconut oil (optional)

Preparation

  1. Allow the vanilla ice cream to soften slightly for a few minutes at room temperature, so it becomes easily spreadable.
  2. Take a chocolate cookie and spread a generous amount of vanilla ice cream on top. Cover with another biscuit, pressing gently to form a “sandwich”. Repeat the process with all the cookies and ice cream.
  3. Place the cookie ice creams on a tray lined with parchment paper and allow them to harden in the freezer for at least 1-2 hours.
  4. Before serving, melt the dark chocolate in a double boiler or in the microwave, adding coconut oil to make it more fluid and glossy, if you wish.
  5. Brush the cookie ice creams with the melted chocolate on one side or dip them partially, then place them back on the tray with the parchment paper.
  6. Put the cookie ice creams back in the freezer until the chocolate has solidified.
  7. They are ready to be served after the chocolate has hardened. If not served immediately, store the cookie ice creams in an airtight container in the freezer.
