Vampire Donuts

Ingredients

  • 200 g of icing sugar
  • 2-3 tablespoons of orange juice (or limoncello for an Italian touch)
  • Red food coloring

Preparation

  1. In a bowl, mix the warm milk with the yeast and let it rest for a few minutes.
  2. In another bowl, sift the flour and create a well in the center. Add the sugar, eggs, ricotta, grated lemon zest, and pinch of salt.
  3. Pour the milk with the yeast into the center of the flour and start kneading until you have a smooth, uniform dough.
  4. Cover with a kitchen towel and let it rise in a warm place for about 1 hour or until it has doubled in volume.
  5. Roll out the dough on a lightly floured surface to a thickness of about 1 cm.
  6. Using a cookie cutter or a glass, cut out circles and then make a hole in the center of each donut with a smaller cookie cutter.
  7. Let the cut donuts rest for an additional 20 minutes.
  8. Fry the donuts in hot oil (175 °C) until golden brown, then drain them on paper towels.
  9. Prepare the glaze by mixing the icing sugar with the orange juice or limoncello and a bit of red food coloring to get a “vampiric” hue.
  10. Once the donuts have cooled, dip them one by one into the glaze.
  11. Finally, add the “blood” syrup to the tips of the donuts for a spooky effect.
