Vampire Donuts

Ingredients
- 150 ml of warm milk
- 7 g of dry yeast
- 500 g of flour 00
- 100 g of granulated sugar
- 2 eggs
- 100 g of ricotta
- Grated zest of 1 lemon
- A pinch of salt
- Oil for frying
For the decoration:
- 200 g of icing sugar
- 2-3 tablespoons of orange juice (or limoncello for an Italian touch)
- Red food coloring
- Raspberry or strawberry syrup to simulate the “blood”
Preparation
- In a bowl, mix the warm milk with the yeast and let it rest for a few minutes.
- In another bowl, sift the flour and create a well in the center. Add the sugar, eggs, ricotta, grated lemon zest, and pinch of salt.
- Pour the milk with the yeast into the center of the flour and start kneading until you have a smooth, uniform dough.
- Cover with a kitchen towel and let it rise in a warm place for about 1 hour or until it has doubled in volume.
- Roll out the dough on a lightly floured surface to a thickness of about 1 cm.
- Using a cookie cutter or a glass, cut out circles and then make a hole in the center of each donut with a smaller cookie cutter.
- Let the cut donuts rest for an additional 20 minutes.
- Fry the donuts in hot oil (175 °C) until golden brown, then drain them on paper towels.
- Prepare the glaze by mixing the icing sugar with the orange juice or limoncello and a bit of red food coloring to get a “vampiric” hue.
- Once the donuts have cooled, dip them one by one into the glaze.
- Finally, add the “blood” syrup to the tips of the donuts for a spooky effect.
