Peach and Amaretti Upside-Down Cake

Ingredients

  • 3-4 ripe peaches (depending on size)
  • 200g of amaretti
  • 150g of soft butter
  • 150g of sugar
  • 3 eggs

  • 1 packet of baking powder

  • Butter (for greasing the cake tin)

Preparation

  1. Preheat the oven to 180° C.
  2. Butter a cake tin and sprinkle the bottom with a layer of brown sugar.
  3. Wash, dry, and slice the peaches without peeling them. Arrange the peach slices at the bottom of the tin, completely covering the brown sugar.
  4. In a bowl, beat the soft butter with the sugar until you have a creamy mixture.
  5. Add the eggs one at a time, continuing to beat.
  6. Blend the amaretti to a not too fine powder and incorporate it into the mixture.
  7. Sift the flour with the baking powder and add to the mixture, mixing gently until smooth.
  8. Pour the mixture into the cake tin, over the layer of peaches, leveling it well.
  9. Bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  10. Let the cake cool for a few minutes, then gently turn it out onto a serving plate so that the peaches are on top.
