Peach and Amaretti Upside-Down Cake

Ingredients
- 3-4 ripe peaches (depending on size)
- 200g of amaretti
- 150g of soft butter
- 150g of sugar
- 3 eggs
- 200g of type 00 flour
- 1 packet of baking powder
- Brown sugar (for the base of the cake tin)
- Butter (for greasing the cake tin)
Preparation
- Preheat the oven to 180° C.
- Butter a cake tin and sprinkle the bottom with a layer of brown sugar.
- Wash, dry, and slice the peaches without peeling them. Arrange the peach slices at the bottom of the tin, completely covering the brown sugar.
- In a bowl, beat the soft butter with the sugar until you have a creamy mixture.
- Add the eggs one at a time, continuing to beat.
- Blend the amaretti to a not too fine powder and incorporate it into the mixture.
- Sift the flour with the baking powder and add to the mixture, mixing gently until smooth.
- Pour the mixture into the cake tin, over the layer of peaches, leveling it well.
- Bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool for a few minutes, then gently turn it out onto a serving plate so that the peaches are on top.
