Lemon Upside-Down Cake
17/11/2023I would be pleased to assist you with the recipe for the lemon upside-down cake, a delicious dessert that highlights the fresh, citrus flavor of lemon. Italian tradition does not have a typical “upside-down cake” like the American version with pineapple, but we can do something similar with an Italian twist.
Ingredients
For the caramel:
- 100 g of sugar
- 30 ml of water
- Juice of 1 lemon
For the cake:
- 3 eggs
- 200 g of sugar
- 100 g of melted butter
- 150 ml of milk
- Grated zest of 2 lemons
- 200 g of “00” flour
- 1 packet of baking powder
- A pinch of salt

Lemon caramel: Start by preparing the caramel. In a pan, put the sugar with water and lemon juice. Allow the sugar to dissolve and start to caramelize over medium heat, without stirring to prevent crystallization. Once the caramel has reached a nice amber color, pour it into the bottom of a springform baking pan and let it cool.

Cake batter: In a large bowl, beat the eggs with the sugar until you have a soft and fluffy mixture. Add the melted butter and milk, continuing to stir. Then, incorporate the grated lemon zest.

Dry ingredients: In another bowl, sift together the flour, baking powder, and a pinch of salt. Add this mixture of dry ingredients to the liquid mixture and gently mix until you have a smooth dough.

Assembly: Pour the batter into the pan over the now-solidified caramel. Level well with a spatula and bake in a preheated oven at 180°C (356°F) for about 35-40 minutes, or until a skewer inserted in the center of the cake comes out clean.

Turning out the cake: Once the cake is baked and slightly cooled, place a plate over the pan and flip it quickly and decisively. The cake should come out easily with the caramel and lemon slices on top.
Serve warm or at room temperature, according to your preferences.
Trivia
You can decorate the surface of the cake with thin slices of lemon that you previously arranged in the caramel before pouring the batter over them, for an even more inviting look and an intensification of the lemon flavor.
