Bicolored Pudding

Ingredients

For the chocolate pudding:

  • 500 ml of milk

  • 500 ml of milk
  • 100 g of sugar
  • 40 g of cornstarch (cornflour)
  • 1 vanilla pod (or 1 teaspoon of vanilla extract)

Preparation

For the chocolate pudding:

  1. In a saucepan, mix the sugar, cocoa powder, and cornstarch. Add a pinch of salt.
  2. Gradually pour the milk into the saucepan, stirring constantly with a whisk to prevent lumps from forming.
  3. Place the saucepan over medium heat and continue stirring until the mixture thickens and boil for a minute.
  4. Remove from heat and pour the pudding into molds (preferably glass or silicone) filling them halfway.
  5. Let cool slightly before refrigerating, so as to create a solid layer that will then support the second layer.

For the vanilla pudding:

  1. In another saucepan, mix the sugar and cornstarch.
  2. Split the vanilla pod along its length and scrape out the seeds with the tip of a knife. Add the vanilla seeds (or vanilla extract) and the pod to the milk that you will pour into the saucepan.
  3. Mix well and proceed as with the chocolate pudding: heat over medium heat, stir until the mixture thickens and boil for a minute.
  4. Take the pudding off the heat and remove the vanilla pod if you have used it.
  5. Gently pour the vanilla pudding over the now-set chocolate pudding layer.
  6. Let the puddings cool to room temperature before putting them in the refrigerator for at least 2 hours.

The pudding is a dessert of ancient origins, whose name derives from the French “boudin”, which originally meant “sausage”, as the first puddings were cooked wrapped in animal intestines, just like some sausages. The bicolored version is a way of serving pudding that is aesthetically pleasing and allows for play with flavors.
